Toast the bread (optional)
If desired, toast the whole-grain bread slices until lightly golden and crisp.
Prepare the vegetables
Rinse and thinly slice the cucumber. Rinse and slice the tomato. Peel and thinly slice the avocado. Rinse and pat dry the alfalfa sprouts and lettuce leaves. Peel and thinly slice the red onion.
Assemble the sandwiches
