Prepare the zucchini

Preheat the oven to 400°F (200°C). Cut the zucchini in half lengthwise. Using a spoon, scoop out the seeds and flesh, leaving a 1/4-inch thick shell. Place the zucchini halves on a baking sheet, cut-side up.

Bake the zucchini

Brush the zucchini halves with 1 tablespoon of olive oil and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Bake for 15-20 minutes, or until the zucchini is tender but still firm.

Prepare the vegetables

While the zucchini is baking, dice the red and yellow bell peppers, onion, and tomatoes. Mince the garlic cloves.

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced bell peppers, onion, and minced garlic. Sauté for 5-7 minutes, or until the vegetables are softened.

Spoon the vegetable mixture into the baked zucchini halves, dividing it evenly among the boats.
