Read instructions and get ready to cook
Rinse quinoa
Rinse the quinoa in a fine-mesh strainer under cold running water. Drain well.
Combine ingredients
In a medium saucepan, combine the rinsed quinoa, coconut milk, water, dates, cinnamon, cardamom, ginger, and salt.
Bring to a boil
Bring the mixture to a boil over medium-high heat.
Simmer porridge
Reduce the heat to low, cover, and simmer until the quinoa is tender and most of the liquid is absorbed, about 15 minutes.
Grate apple
While the porridge cooks, grate the apple on the large holes of a box grater. Set aside.
Fluff quinoa
Remove the pot from the heat and let stand, covered, for 5 minutes. Fluff the quinoa with a fork.
Serve
Divide the porridge between two bowls. Top each serving with half of the grated apple and a tablespoon of almond butter. Serve warm.
