Steps

Read instructions and get ready to cook

1
Prepare the squash

Preheat the oven to 375°F (190°C). Rinse the yellow squash and slice it into 0.25-inch thick rounds. In a large pot of boiling water, cook the squash slices for 5 minutes or until tender. Drain the squash and set it aside.

2
Prepare the onion and topping

Peel and finely chop the onion. In a small bowl, mix the breadcrumbs with half of the grated cheddar cheese.

3
Sauté the onion

In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté for 5 minutes or until softened.

4
Prepare the filling

In a large bowl, mix the sour cream, remaining grated cheddar cheese, eggs, salt, and black pepper until well combined. Add the cooked squash and sautéed onion to the bowl and stir gently to combine.

5
Assemble and bake the casserole

Transfer the squash mixture to a 9x13 inch baking dish. Sprinkle the breadcrumb and cheese topping evenly over the casserole. Bake for 30-35 minutes or until the top is golden brown and the casserole is bubbly.

6
Let cool and serve

Remove the Yellow Squash Casserole from the oven and let it cool for 5-10 minutes before serving hot as a side dish.
